Start with really ripe bananas. They are the sweetest.
I use a blender to mix it all up and make my life easy.
The mixture should be sticky and fall off a spoon into the hot oil. Some people get fancy and use a pastry bag for perfect round donuts.
Dust with powdered sugar and serve with maple syrup. These are easy to make and delish! A taste of Guam in your kitchen.

 

Buñelos Aga (Banana Donuts)

Ingredients
  1. 2 cups mashed ripe bananas (about 4-5 small bananas)
  2. 2 cups all purpose flour
  3. 1/2 teaspoon baking powder
  4. 1/4 cup sugar
  5. 1/8 teaspoon salt
  6. 1.5 teaspoon vanilla extract
  7. 2 tablespoons milk
  8. 1.5 teaspoon cinnamon
  9. Vegetable oil (for frying)
  10. Maple syrup, for dipping or glazing
Instructions
  1. Place the oil in a large frying pan; turn the heat to medium to begin preheating the oil.
  2. Mix all of the other ingredients thoroughly. If you have a high powered blender or machine, that makes it super easy. The batter will be very sticky but don’t be tempted to add more flour, see pictures for what it should look like.
  3. When oil is hot, drop the mixture by spoonful into the oil, turning frequently. (Test the oil with one donut to make sure it's bubbly and hot).
  4. Deep fry over medium heat. Cook until golden brown. If the donuts are getting dark brown too quickly, reduce the heat and cool the oil.
  5. Drain on a paper towel.
  6. Dust powdered sugar and serve warm. For a dipping sauce, you can use maple syrup, honey, Nutella or any flavored syrup.
Notes
  1. I use a teaspoon measure to scoop up the donuts to put into the oil. I like them smaller, bite sized. For a pina colada version, you can also add a teaspoon of coconut extract.
  2. Bananas that are brown on the outside but still white on the inside are perfectly sweet for this recipe. A great use of old bananas.
  3. For a healthier version, you can use one cup whole grain flour and one cup all purpose. This will make the donuts more dense but still delicious.
